Other then the food or beverages served in the restaurant, you also need look into the Unique Selling Proposition of your restaurant. Unique Selling Proposition is why customers choose your restaurant over your competitors. One way is to add an Alfresco Dining Area.

The term “alfresco” comes from an Italian word meaning fresh or open air. I am not sure what is it about an open air dining area that it adds elegance to any dining experience. People also believe that food eaten outdoors taste better. Maybe it’s the sunshine and warm breeze that creates a “I’m on vacation” feeling,

As Malaysia is blessed with warm weather throughout the year, outdoor dining is a favorite option among diners especially from people cooped up in the office 5 days a week. This is the reason that I have setup an outdoor dining area on the roof of the hotel that I worked. The Roof Top Restaurant has a great view of the sea especially when the sun sets. So much so that I have added a special sunset happy hour with beers at a special price. I have even purchased two coin operated binoculars so people can look out into the sea.

If your place has a great full moon view on the sea, you can do what I did in Cherating which was have a full moon happy hour. The full moon nights are really beautiful as the moon lights up the sea. What I did was look at the Chinese calendar which is quite easy to get in Malaysia. From there you will get the dates of when the moon is at its fullest. As we had quite a number of long stay guests who normally stayed a week, we put into their rooms that there will be a beautiful full moon in three days time. So on the full moon nights we opened the pool bar which was near the sea, played light instrumental music and served beverages and bar snacks. There were a quite a number of people just sitting having drinks and enjoying the moonlight. Entertainment is provided by mother nature and its free.

Some Ways on Getting your Customers to Spend More

Once the diner walks into your restaurant you need to do little things to help your customers spend more. What I mean is simple ways to unknowly get your diner to purchase more item or spend more time in yoor restaurant.

My boss liked to use this quote often. He used to say “A Customer is a Person who has Our MONEY in his Pocket“. Then he goes on to say how we are going to take our money from him. If you think that this quote is dishonesty, then you are in the wrong line of business. You have spend thousands on advertising and promotions, you need to get the returns right. Once a customer steps into your restaurant he has set his mind that he is going to eat here. Most of the time the customer has already decided what to eats. In my restaurants I use certain tactics to get the customer to spend more. The methods are simple task that you and your staff can do in order to increase your sales from the existing customers.

 1. Add a Sparkler to your Wines

sparklerI did this for our New Year’s Eve Buffet in Koh Samui one year. What we did was whenever a table ordered a bottle of wine; we stuck a Sparkler to the wine cork. Lit it up and carried the wine high to the table for everyone to see. After the first wine was sold, almost every table ordered wine. Some even ordered champagne. When the New Year began my wine cellar was almost empty. This method is great for a restaurant that is dimly lit or in a pub. People like to be seen buying something especially when it’s expensive. That’s why people buy Gucci bags, Rolex watches and flaunt it. They want to be seen to be wealthy. They don’t want to lose out to the next table. If that table orders champagne, they will also order champagne. Especially when they want to impress their date, friends or business contacts.



2. Visual Tricks

In my previous post “How to Market your Menu“, I mentioned that I put pictures of individual food items in front of the restaurant. On each poster I put catchy phrases like “What a Hunk of Beef” for beef burger and “Get Curried Away” for curry dishes. Here we noticed that items of display sold more. So we put pictures of desserts with taglines like “Sinful Pleasures“. We sold quiet a number of desserts that way. A word of advice put one or two pictures.

 

3. Up sell with Close ended Questions

Train your staff to sell using close ended question. Closed ended questions are questions with limited answers. Most of the time it’s a yes or no answer. McDonald’s have perfected this method and they make millions in additional revenue by employing this tactic. When you enter a McDonald restaurant, you have set your mind to buy a Big Mac. When you reach the counter and order a Big Mac, the staff there will normally ask you a yes or no question like “Would like some fries with your order”. When you say yes, they will ask another closed ended question, like “A large one?” Very seldom you will hear them ask you whether you want a large or small coke. If they ask you that you will surely choose a small one. The items that you want to up sell must be reasonably priced, not to expensive. After call he already took a burger, a RM 3 French fried will not sound expensive.

 4. Sell Souvenir Items

SouvenirThis is what famous theme restaurants and pub like Hard Rock Cafe, TGI do. They set a little corner to sell souvenirs related to the restaurant. They sell T shirts, mugs, and caps and so on. All with their logo and a witty phrases. When your customers buy the souvenirs and use it, they will also be a walking advertisement for you. A word of caution doesn’t price the item too high, after all you have made a profit selling food and beverages. This is an incremental profit.

Restaurant Promo Idea #14- Repeat Business with Balloons

Balloon Giveaway To Kids




Recently I joined a family resort as the head of the Food and Beverage Department. As with most businesses, we are always looking for ways to enhance our customers experience thus bringing in repeat business. In my previous post “Restaurant Promo Idea #13-Promote through Kids”, I’ve mentioned that kids choose 50% of restaurant visits and according to a recent study 75% of parents consider their kids preference when choosing a restaurant.
So we added a few things like a corner in the breakfast buffet, food ideal for kids like oatmeal porridge, fish fingers. All kids love balloons, so we have incorporated some balloon giveaways in our restaurant. Below are two ways we used balloons to enhance our customers experience, thus bringing in repeat business.

Give out balloons

Most hotels and resorts in Malaysia include breakfast with their room. Ours is one of them. As most families will come for breakfast especially on weekends and public holidays, we took this opportunity to capture the kids. What we did was to have one staff go around giving out colourful balloons on sticks to the kids. The balloons had our logo on them. Kids was happy (I noticed all kids love balloons, my son included) and the parents was beaming. And balloons don’t cost much. You can also go a step further by putting in lucky draw vouchers in the balloons. The kids can pop the balloon and claim a prize at the cashier. Prizes can be toys or games for the kids. Have some extra empty balloons on standby cause some kids would rather not lose their balloon. You can give them a replacement one after they pop theirs.

Balloon Sculptures

For dinner which was not packaged with the room, we had to use a different approach. We got a Balloon Sculpturing Tutorial CD, practiced and learned balloon sculpturing. We set up a team of staff that knew a few balloon sculptures. So when the dinner crowd started dining, what my staff would do is go around from table to table making swords or balloon animals. The kids was so happy and it was fun for us too. They will surely remember us as a place that gave them balloons during dinner. And when their parents ask where would like to have dinner or stay they will sure to suggest our place cause of the happy memory they had. An easy balloon sculpture to learn and make is sword balloons and its a big hit with everyone, especially the kids.
